It may be a bit simpler than you think, but still a bit of work.
I would start by setting up the new server with the same bonjour name as
the old one. As long as the old one isn't running any more, this should
be fine and will make the transition easier.
Copy the entire contents of the Public Databases folder on your existing
server to the same folder on your new server.
Finally, you'll need to go to each client and open the Available Servers
wizard. Delete the server from the wizard, then add it again (using the
new IP address).
At this point the databases on the client should connect to your new
server.
By the way, if you expected this to happen on a repeating basis you
might want to set up a domain name for your server. Panorama will accept
domain names (for example mydomain.com) as well as ip addresses
(123.45.67.123). That way you could just update the DNS information and
wouldn't have to mess with the Available Servers wizard on each client.
